Practical Course – IDDSI Competency with ORAL is our two day technical course that develops the skills needed to show competency in making foods that fit the IDDSI Framework.

This highly commended competency course is designed for chef managers at all levels in organisations where there is a dysphagia food service. The extended duration of the course gives learners the time needed to develop a deeper understanding of how to use ORAL when making foods suitable for the IDDSI Framework so that competency can be demonstrated.

Our competency course has been used to train health and social care catering professionals and other managers that require the proven competency of making food that fits the IDDSI Framework.

The Course

The format of the course combines theoretical presentations with group workshops to enhance understanding, develop ideas and give context to the practical sessions.

Practical skills for ORAL are introduced in a methodical way with detailed instructions and observations being delivered through demonstrations, testing and tastings.

The course runs for approximately 7 hours on day one and 5 hours on day two with scheduled breaks. The course is supported by online modules in catering for dysphagia and ORAL.

Learners completing the Practical Course – IDDSI Competency with ORAL will also receive a certificate of competency, on completion of a successful assessment, for evidence in training files and access to course resources online.

The course is designed for anyone managing operations that deliver a dysphagia food service.
