Can You Name The IDDSI Level – The Results

The Results Are In

We found some old images from a ‘pre’ and ‘post’ IDDSI world and thought it would be great to set up a quick quiz to see if people could name the IDDSI Level from the pictures.

It appears that it is impossible for an image to always accurately demonstrate the relevant textural characteristics of food for IDDSI. Remember this was for fun, those who gave the quiz a go were anonymous and so we have no idea what there understanding of IDDSI is. What we do know is that they have come from our social media contacts and we have had a number of clinicians and healthcare chefs come to us for further explanation.

The Results – Explained

Non-Melting Jelly

Correct Answer: IDDSI Level 6 – Soft and Bite Sized

This image of our non-melting jelly shows pieces that have been cut to 15mm x 15mm x 15mm which is the stipulation, set out on the IDDSI Audit Sheets, for adult IDDSI Level 6 – Soft and Bite Sized. The IDDSI Fork Pressure test results have not been shown and it is not clear that this jelly is not a ‘Transitional Food’.

Cottage Pie

Correct Answer: IDDSI Level 4 – Pureed

This image of a cottage pie and vegetable side dishes shows food that is completely smooth and that has a texture that can be piped onto the plate.

Note – This image was taken before IDDSI had been implemented and was not aligned to the IDDSI Framework. Therefore, although completely smooth, it is unclear if this food is too firm or sticky without showing the results of the IDDSI Testing Methods.

Pate, Cheese and Pickle on Toast

Correct Answer: IDDSI Level 4 – Pureed

This image of pate, cheese and pickle on toast shows food that is completely smooth and, on the whole, has been piped. The technique for making the toast allows for a suitable texture to be achieved and to have clear definition of the edges. However this is unclear without seeing the results of the IDDSI Testing Methods as this image was taken before IDDSI implementation and there are signs that some of the other food textures on the plate may be too sticky.

Bouillabaisse, Toast and Rouille

Correct Answer: IDDSI Level 7 – Easy to Chew

This image of bouillabaisse, toast and rouille shows food that is completely smooth and with no lumps. The toast shows has been placed at an angle to the side of the bouillabaisse and in this case can be picked up. This is unclear without showing the results of the IDDSI Testing Methods, as there could be instances, with careful preparation, that this would not be the case.

Apple Pie and Custard

Correct Answer: IDDSI Level 7 – Easy to Chew

This image of an apple pie and custard shows food that is completely smooth and reformed in the original composition. There are clues that the nature of the texture of the texture of the apple pie would allow it to be picked up, however this is unclear without being able to physically perform the IDDSI Testing methods on this dish.

Correct Answers: 20%

Moroccan Lamb Tagine

Correct Answer: IDDSI Level 5 – Minced and Moist

This image of Moroccan lamb tagine shows food that is moist and cohesive and that has pieces of food no larger than 4mm x 4mm x 15mm. It is unclear without seeing the IDDSI Testing Methods, if the small pieces of food are tender enough or if the foods are sticky.

Beetroot and Goat’s Cheese Salad

Correct Answer: IDDSI Level 6 – Soft and Bite Sized

This image of beetroot and goat’s cheese salad shows food that is completely smooth. The cubes of salad are gelled, tender and cut to 15mm x 15mm x 15mm. This is unclear in this image as there is no scale and there are methods that can be used where this could be suitable for IDDSI Level 4 – Pureed. However without seeing the IDDSI Testing Methods results this would be impossible to say by looking at this picture.

Spaghetti Bolognaise

Correct Answer: IDDSI Level 4 – Pureed

This image of spaghetti Bolognaise shows food that is completely smooth. It is unclear from the image how thick the spaghetti is, however due to the starchy nature of the food this does pass the IDDSI Testing methods. Without showing these results it is difficult to imagine how the food will perform.
