Ingredients
Lemon Cheesecake Filling
180g Cream Cheese
200g Lemon Curd
200g Double Cream
Ginger Biscuit Base
300g Ginger Biscuits
400g Custard
Method
Lemon Cheesecake Filing
- Whisk the cream cheese and lemon curd together until fully combined
- Whisk in the double cream until the mix reaches the desired consistency – be careful not to over thicken as this may make the mix too thick and sticky for the IDDSI testing methds
Ginger Biscuit Base
- Blend the ginger biscuits until they become a fine texture
- Add the custard until you reach the desired consistency
