IDDSI Level 4 Recipe – Lemon and Ginger Cheesecake

This deliciously zingy version of our cheesecake recipe is great as a luxurious end to a dinner party or as a high energy snack at any time of the day!

This simple recipe combines a small number easy to find ingredients – it is definitely more than the sum of it’s parts!

If you want to serve this as a dinner party finale try matching it with a sweet Muscat dessert wine for a special impact!

Ingredients

Lemon Cheesecake Filling

180g Cream Cheese
200g Lemon Curd
200g Double Cream

Ginger Biscuit Base

300g Ginger Biscuits
400g Custard

Method

Lemon Cheesecake Filing

  1. Whisk the cream cheese and lemon curd together until fully combined
  2. Whisk in the double cream until the mix reaches the desired consistency – be careful not to over thicken as this may make the mix too thick and sticky for the IDDSI testing methds

Ginger Biscuit Base

  1. Blend the ginger biscuits until they become a fine texture
  2. Add the custard until you reach the desired consistency
